چکیده
ALEKSIEVA, K., I. NACHEVA, K. DIMOV and Tsv. TSVETKOV, 2016. Natural and gamma induced free radicals in dried fruits. An EPR study. Bulg. J. Agric. Sci., 22: 1010–1013 The aim of the present study is to prove radiation processing in air dehydrated dates, prunes and fi gs, as well as to recommend which part of the fruit to sample. The detection method is Electron Paramagnetic Resonance (EPR) spectroscopy. Before irradiation in date stone, prune stone and fl esh, and fi g seeds EPR spectroscopy was detected a weak singlet line, whereas date fl esh and fi g fl esh are EPR silent. After gamma-irradiation in date stone and fl esh, and fi g fl esh a “sugar-like” EPR spectrum is recorded. In prune stone a typical “cellulose-like” spectrum is detected, whereas in prune fl esh and fi g stone only singlet line is recorded as before radiation treatment. Of research done it can be seen that the irradiation is proved in a different part of the fruit. European Protocol EN 13708 is applicable to irradiated dried dates and fi gs, whereas Protocol EN 1787 for dried prunes.

Study on radiation-induced radicals giving rise to stable EPR signal suitable for the detection of irradiation in L-sorbose-containing fruits
Ionizing radiation is useful for the conservation and disinfestation of fresh and dried fruits. The treatment of fruits with gamma-rays or beams of accelerated electrons has been carefully tested and was recommended by FAO/WHO Codex Alimentarius Commission for the common use as an effective and safe preservation method [1]. It was found earlier that the ionizing radiation produces stable EPR si...

In this study, based on Density Functional Theory (DFT), the effect of solution on the g-tensor, hyperfine coupling constant of atoms and finally the EPR spectrum of alanine free radicals induced by ionizing radiation such as electron and gamma was investigated using implicit models such as COSMO, and explicit models such as introducing hydrogen bonds to the cluster structures. The obtained res...

Gamma radiation generates free radicals in biological system by inducing cellular water radiolysis. If not neutralised, free radicals oxidise vital bio-macromolecules causing structural and functional impairment and contribute to cell death. In present study, free radical scavenging activities of a novel bacterial secondary metabolite, N-acetyl tryptophan glucoside (NATG) was assessed against g...

The reaction of CH3O2 radicals with acetaldehyde on the solid surface of NH4NO3 has been studied in a flow capillary reactor at low pressure and room temperature. The experiments were performed using EPR spectrometer combined with the kinetic method of radicals freezing. Peroxy radicals revealed an oscillation complex behavior during the process regarding to the phenomenon of radicals multiplic...
